Making Patties

On average, one pound (450g) of raw ground beef equates to two cups of meat.

At 1/2 cup per patty, one pound will yield four 1/4 pound patties. These reduce once cooked to just over three ounces – perfect for small appetites.

Approximately 3/4 cup per patty; three 1/3 pound patties at about 5 ounces once cooked.

At 1 cup each (about 1/2 pound)/ two patties that cook up to nearly 7 ounces in size.

Pre-season an entire batch of patties using your favorite herbs and spices, one of the rubs that follow, or leave them plain. You can always apply your choice of rub right before placing the burgers on the grate.

Loosely shape each portion by hand without overworking the meat. Create a slight indentation in the center to help patties retain their shape while cooking.

Make large batches ahead of time and freeze with a square of waxed paper between each. Well wrapped, they’ll keep for a few months.
